Our Experience - Dasai Blue sake Brewery

Dassai Blue was one of those experiences where we walked in knowing we enjoyed sake and walked out realizing how little we actually knew about how it was made. The guided brewery tour was incredibly informative, walking us through the sake-making process while explaining the precision and craftsmanship behind every step.

We also learned the story behind Dassai Blue itself, including the history of Dassai and what makes the Hudson Valley operation unique. Understanding why the brewery was created here and how its approach relates to — while also distinguishing itself from — Dassai's Japanese roots made the experience much more interesting than simply touring another production facility.

After seeing the brewery and learning about the process, we finished with a sake tasting that brought everything together. Being able to taste the finished product after learning how factors such as the rice, water, polishing, and fermentation influence it gave us a much greater appreciation for what was in the glass.

Whether you're already a sake enthusiast or you're simply curious about how it's made, we highly recommend taking the guided tour rather than stopping only for a tasting. We learned an incredible amount, and it ended up being one of the most educational food-and-drink experiences we've had in the Hudson Valley.
